Pack some homemade protein for an autumn hike
Autumn is a wonderful time to enjoy the great outdoors. Moderate temperatures, ample sunshine and colorful landscapes make it a popular time to hike, kayak, go camping, ride bikes and engage in other outdoor activities.
For hiking enthusiasts, nothing beats an autumn day on the trails. Fall weather makes longer hikes possible, and it’s wise to take sustenance along on such excursions. Protein bars are an ideal snack since they’re both filling and don’t take up a lot of room.
Hikers can even try making their own protein bars at home with this recipe for “Homemade Protein Bars with Peanut Butter & Hemp Protein” courtesy of Lines+Angles.
Homemade Protein Bars with Peanut Butter & Hemp Protein
Makes 12 bars
Ingredients:
13 oz. peanut butter, no added sugar, divided
2 ½ oz. pure maple syrup
3 oz. almond flour
3 oz. coconut oil
6 oz. chopped dark chocolate, at least 70% cocoa solids, divided
3 oz. hemp seeds
1 pinch salt
Directions:
- Grease and line the base and sides of an 8-inch baking dish with parchment paper.
- In a large mixing bowl, thoroughly stir together 8.8 oz. peanut butter with the maple syrup and almond flour until well combined. Transfer to the baking dish, evenly pressing it across the base. Cover and chill until needed.
- Meanwhile, combine the remaining 4.4 oz. peanut butter, coconut oil, half the chocolate, hemp seeds and salt in a heatproof bowl. Set the bowl over a half-filled saucepan of simmering water, stirring until smooth.
- Remove from the heat and pour the mixture over the chilled base. (Keep the water simmering.)
- Place the remaining chocolate in a clean bowl. Set it over the simmering water, stirring until melted.
- Drizzle the melted chocolate over the topping in the dish. Cover and chill until set, about 4 hours.
- When ready to serve, cut into slices and turn out.
