Hit the sweet (potato) spot with homemade bread
Many people have a passion for baking. Baking can be a rewarding hobby and fill a home with an aroma that’s unique, welcoming and instantly identifiable.
There’s no shortage of options when the desire to bake arises. Homemade bread is a go-to among baking enthusiasts, who can whip up a loaf of this “Sweet Potato Bread” courtesy of Lines+Angles.
Sweet Potato Bread
Makes 1 loaf
Ingredients:
1 ½ cups granulated sugar
¼ cup canola oil
2 eggs
1 ¾ cups sifted all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
1/3 cup water
1 cup cooked and mashed sweet potatoes
½ cup shelled chopped pecans or walnuts
In addition:
Pure maple syrup, for drizzling
Whipped cream, to serve
Directions:
- Preheat oven to 350º F. Coat a 9-x-5-inch loaf pan with nonstick cooking spray.
- In a large bowl, combine sugar and oil; beat well. Add eggs, one at a time and beat between each addition. In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in mashed sweet potatoes and chopped nuts.
- Pour batter into prepared loaf pan. Bake for about one hour, or until a cake tester inserted into the center of the bread comes out clean.
- Cool in the pan for 5 minutes and turn out onto a wire rack to cool further. Slice and serve with maple syrup and whipped cream.
