August in the Northeast means some really flavorful produce is ready to be picked and enjoyed. Combining it only makes it better! Consider this recipe for August-ready goodies, courtesy of the Monadnock Farm & Community Coalition in New Hampshire.
Mixed Greens, Peaches & Corn Salad with Balsamic-Maple Vinaigrette
Ingredients:
Mixed baby greens (e.g., baby spinach, arugula) – about 8 loosely packed cups
2 large ripe peaches, sliced
½ cup fresh (or thawed frozen) corn kernels
½ cup spicy pecan pieces (or substitute toasted nuts like walnuts or hazelnuts)
2 oz. crumbled goat cheese
Vinaigrette:
2 tbsp balsamic vinegar
1 ½ tbsp pure maple syrup
1 tsp Dijon mustard
¼ tsp kosher salt
⅛ tsp freshly ground black pepper
6 tbsp extra-virgin olive oil
Instructions:
To make the dressing: Whisk together vinegar, maple syrup, mustard, salt and pepper. Gradually whisk in the olive oil until emulsified.
To assemble the salad: Toss the greens with half the dressing, then divide onto plates. Top with sliced peaches, corn kernels, pecans and goat cheese.
Drizzle the remaining dressing on top and serve immediately.
