Beyond the scramble

Eggs are foregone conclusion of life on the farm. For most of us that grew up on a farm of any size, feeding the chickens and gathering eggs was just another entry on the list of chores. However, across the last decade or two, smaller poultry animals have become more and more accessible to folks like the average homeowner with an acre or two. Chickens and their other egg-laying cousins don’t require too much space. One doesn’t need to live on a farm to raise them.

Even more so in this era of rising grocery prices (and highly pathogen avian influenza), eggs are a pricey commodity. Rather than do without, even more folks are choosing to raise their own layers.

They’re commonplace in the refrigerator – but what do you do with them? Everyone is always down for a good scramble to start the day, a hardboiled egg or two at lunch – and maybe some delicious deviled eggs at a special event. Still, it’s easy to get in a little bit of a culinary lurch sometimes. What can one do to “spice things up”?

The easiest and most immediate answer is to shake up both your spice cabinet and the sauces and whatnot that occupy your fridge. This article from TastingTable.com offers some suggestions for those who like a little kick, with suggestions ranging from the more commonplace (cayenne pepper) to the more exotic (gochujang, a Korean chili paste).

This article courtesy of retailer Sauder’s Eggs offers some milder alternatives for those who might have a quieter taste palette – mainstays like oregano, tarragon and more.

Simple spices aside, what recipe potential is there beyond the simple scramble? Culinary lore says there are a hundred or more recipes one can craft from an egg (or by using eggs). Most average Americans will never cook that many variations during their lifetime, but the point is the sky is the limit.
